Preheat oven to 220⁰C (200⁰C fan forced). Reserve 2 tablespoons of the McCormick Grill Mates Smokin’ Texas Slow and Low BBQ Rub for loaded sauce.
Toss potatoes and onion in oil with remaining McCormick Grill Mates Smokin’ Texas Slow and Low BBQ Rub. Place in a single layer on a baking paper lined baking tray and bake for 30–40 minutes, turning once or until cooked and crispy brown.
To make sauce; melt butter in a medium saucepan over medium heat. Add the flour and stir well to make a smooth paste. Cook for 1 minute or until paste starts to bubble, but do not allow to colour.
Add milk, mustard and reserved McCormick Grill Mates Smokin’ Texas Slow and Low BBQ Rub, whisk until the sauce starts to thicken. Cook stirring for 4-6 minutes until sauce is smooth and thick. Remove from heat and whisk through cheeses, continue until sauce is smooth.
To serve: top wedges with loaded cheese sauce and drizzle over McCormick Grill Mates Brown Sugar Bourbon BBQ Sauce and parsley.
For something different substitute potato wedges with sweet potato wedges. Or if short on time use frozen wedges with the loaded sauces.
