  1. Massage McCormick Grill Mates Slow & Low Smokin Texas Dry Rub into both sides of the brisket. Wrap tightly in plastic wrap and refrigerate for 2 hours minimum or overnight.
  2. Remove plastic wrap from brisket and place in a large roasting pan, add 1 cup (250 mL) of HOT water to pan (2 cups (500 mL) if using BBQ) cover tightly with foil.
  3. BBQ in a 160°C pre-heated BBQ for 4-6 hours on the warming rack (checking every hour that there is liquid in the base of the roasting tray) or until tender. Let rest for 15 minutes covered in foil. Slice or pull meat apart in chunks with 2 forks. OR OVEN BAKE in a 160°C (140°C fan forced) pre-heated oven for 4-6 hours or until tender. Remove beef from BBQ, let rest for 15 minutes covered in foil. Slice or pull meat apart in chunks with 2 forks.
  4. Slice and serve with smoky BBQ sauce.
