Green Slaw salad with green cabbage, red onion and parsley
Rub McCormick Grill Mates Tennessee Smokehouse Slow and Low BBQ Rub onto pork. Cover meat tightly with plastic wrap and refrigerate for a minimum of 2 hrs (or overnight).
Place unwrapped pork into a medium sized roasting tray. Mix together McCormick Grill Mates Brown Sugar Bourbon BBQ Sauce with vinegar and tomato sauce then pour over pork. Add 1 cup of hot water (2 cups if using the BBQ) into the bottom of the roasting tray and cover tightly with foil.
BBQ in a low (160°C) pre-heated BBQ for 4-6 hrs* on the warming rack or on the top of an inverted tray until meat is tender and falling apart. Turn pork every hour and ensure there is still liquid in the base of the roasting tray.
OVEN BAKE in a 160°C (140°C fan forced) pre-heated oven for 4-6 hrs or until tender and falling apart. Turn pork every hour and ensure there is still liquid in the base of the roasting tray. Rest for 15 minutes, pull meat apart using 2 forks and serve.
Serve with a simple green slaw of green cabbage, red onion and parsley with some chipotle mayo.
