Sweet Pepper, Lime & Chilli Ribs

  1. Place the capsicum, sugar, lime juice and zest in a food processor and process until liquefied. Pour into a bowl and stir through McCormick Grill Mates Tennessee Smokehouse Slow & Low BBQ Rub, McCormick Chilli Flakes and McCormick Grill Mates Brown Sugar Bourbon BBQ Sauce until well combined. Reserve ½ cup of the prepared sauce.
  2. Place ribs in a large dish and pour remaining sauce over ribs. Cover with plastic wrap and refrigerate for a minimum of 2 hours (or overnight).
  3. Lift ribs into a medium sized roasting pan, (if barbecuing add 1 cup (250 mL) of hot water into the base of the tray) and cover tightly with foil.
  4. BBQ in a low (160°C) pre-heated BBQ for 3- 4hrs* over indirect heat until meat is tender and falling apart. ensure there is still liquid in the base of the roasting tray.
  5. OR
  6. OVEN BAKE in a 160°C (140°C fan forced) pre-heated oven for 3-4 hrs or until tender and falling apart.
  7. Let rest for 15 minutes, and serve with reserved sauce.
