Using a 10 cm pastry cutter cut each puff pastry sheet into four circles. Place one heaped tablespoon of cooled leftover mixture into the middle of each circle and brush edges lightly with egg. Fold pastry over and using your fingers pinch seal the edges.
Place on baking paper lined baking trays, brush tops with egg wash and bake for 15-20 minutes or until golden.
