Preheat oven 200°C (180°C fan-forced). Line a baking tray with baking paper.
To make damper; in a large bowl, rub flour, butter, sugar and McCormick Ginger Ground together using your fingertips until mixture resembles fine breadcrumbs. Add milk and use a butter knife to combine and bring mixture together forming dough. Sprinkle flour onto a cleaned surface, tip dough out and lightly knead. Cut dough into two equal portions. Roll out each portion to 18cm round x 2cm thick disc. Place one disc onto prepared tray.
To make filling; Combine berries, jam and McCormick Ground Spices in a small bowl. Spread berry mixture over prepared dough disc on tray leaving a 2cm boarder. Top with second dough disc and score cutting 1cm deep (careful not to cut through), into 8 wedges, leaving as a round.
Bake for 40 minutes or until damper is lightly golden and cooked through. Stand for 5 minutes before serving warm with ice-cream or cream.
