Preheat oven to 200°C (180°C fan-forced). Lightly grease a shallow baking dish that will fit the lamb chops in a single layer.
Use approximately 1 ½ tablespoons of the recipe base to season both sides of lamb chops, then, place the lamb chops in prepared dish.
In a large bowl toss the potato slices in the oil then add the remaining recipe base and toss well. Arrange the potatoes slices decoratively on top of each chop.
Cover with baking paper and foil, pinching tightly to seal well, and bake for 45 minutes. Then remove the foil, increase temperature to 200°C return the dish to the oven uncovered and bake for a further 15 minutes or until the potatoes are golden brown and the lamb is tender.
