Spray a large pan with oil and heat over MED – HIGH heat. Add the chicken and brown then transfer to a plate and set aside. Add onion, capsicum and broccolini to the pan and stir- fry for 3-5 minutes or until softened and beginning to char.
Reduce heat and return chicken to the pan. Stir through the recipe base, coconut milk and water and simmer for 10- 15 minutes or until chicken and vegetables are cooked through.
