Ingredients
  • 1 tbsp vegetable oil
  • 800 g cubed beef
  • 1 onion, diced
  • 2 large potatoes, roughly chopped
  • 1 x 40 g sachet McCormick Slow Cookers Massaman Beef Curry Recipe Base
  • 1 x 400 mL can coconut milk
  • ½ cup (70 g) chopped peanuts
  • Fresh coriander
  • Suggested sides: rice or steamed vegetables
Directions
  1. Heat vegetable oil in frying pan over MED-HIGH heat. Brown beef and onion then add into slow cooker insert pot with potatoes.
  2. Mix McCormick Slow Cookers Massaman Beef Curry Recipe Base with coconut milk then pour over the beef and vegetables, stir through.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW (Keep covered during cooking. Cooking times may vary between slow cooker models).
  4. Stir through chopped peanuts. Serve with fresh coriander and your choice of suggested sides.
Recipe Tip

Bring your curry to life with the colourful addition of 1 cup (150 g) of sliced beans 15 minutes before serving.
