Chicken and Seafood Rice
Ingredients
- 200 g chicken, sliced
- 12 raw prawns
- 1 1/2 tbsp KEEN'S Traditional Curry Powder
- 3 tbsp oil
- 1 red capsicum, finely diced
- 4 cups basmati rice, cooked
- 2 tsp brown sugar
- 1 cup fresh parsley
- 1/2 cup fresh mint
- 2 tbsp lemon juice
- McCormick Salt and Pepper
- Yoghurt to serve
Directions
- Mix together chicken and prawns with Keens Traditional Curry Powder in a small bowl.
- Heat oil in a large frying pan or wok and fry chicken and prawns for 3-4 minutes, add in capsicum and stir fry for a further 2 minutes.
- Toss the rice and sugar with the chicken and prawn mixture until warmed though and finish by mixing through parsley, mint and lemon juice.
- Season with salt and serve topped with yoghurt.
