Chicken and Seafood Rice

Ingredients
  • 200 g chicken, sliced
  • 12 raw prawns
  • 1 1/2 tbsp KEEN'S Traditional Curry Powder
  • 3 tbsp oil
  • 1 red capsicum, finely diced
  • 4 cups basmati rice, cooked
  • 2 tsp brown sugar
  • 1 cup fresh parsley
  • 1/2 cup fresh mint
  • 2 tbsp lemon juice
  • McCormick Salt and Pepper
  • Yoghurt to serve
Directions
  1. Mix together chicken and prawns with Keens Traditional Curry Powder in a small bowl.
  2. Heat oil in a large frying pan or wok and fry chicken and prawns for 3-4 minutes, add in capsicum and stir fry for a further 2 minutes.
  3. Toss the rice and sugar with the chicken and prawn mixture until warmed though and finish by mixing through parsley, mint and lemon juice.
  4. Season with salt and serve topped with yoghurt.
