Chicken Chorizo & Prawn Potato Salad
1 chorizo sausage (approx 120g), sliced
1 medium chicken breast, diced
KEEN'S Traditional Curry Powder
4 medium potatoes, boiled and diced
1 spring onion, sliced
2 tbsp sour cream
6 - 8 green tiger prawns, shelled and deveined
McCormick Salt and Pepper
In a hot pan, fry the chorizo until crisp then set aside. Add chicken to the pan and brown in chorizo oil.
Add KEEN’S curry powder, potatoes, spring onions and chorizo to the pan. Toss and add sour cream.
Stir and simmer gently. Add prawns, simmer for 2 minutes then remove from heat. Season with salt and pepper to serve.
