  1. Mix together chicken mince, KEEN’S curry powder, coriander, egg and breadcrumbs in a large bowl. Roll mixture into golf ball size portions.
  2. Heat oil in a large frying pan and fry chicken meatballs on low heat for 12 minutes until cooked all over.
  3. While chicken meatballs are frying, mix together avocado, tomato, spring onions and lime juice.
  4. Place chicken meatballs into iceberg lettuce cups and top with a teaspoon of avocado salsa to serve.
Recipe Tip

As a great alternative, replace the chicken mince with fresh salmon. Just chop it up finely and follow the steps as per the chicken recipe.
