- Preheat oven to 180ºC.
- Stir boiling stock through couscous and KEEN’S curry powder, cover and set aside for 5 minutes.
- Cut tops from capsicums and set aside. Scoop out seeds and discard.
- Fluff couscous with a fork and stir in mixed vegetables.
- Spoon mixture into capsicums and place onto a baking paper lined tray or ovenproof dish.
- Bake for 30-40 minutes until capsicums and vegetables are cooked.
