Ingredients
  • To Make
  • 1 tbsp (20mL) vegetable oil
  • 500 g skinless chicken thigh fillet, cubed
  • 1 onion, thinly sliced
  • 2 tbsp KEEN'S Traditional Curry Powder
  • 1 x 425 g can sliced mango
  • ½ cup (125mL) coconut cream
  • To Serve
  • cooked rice
Directions
  1. Heat oil in a medium frying pan over medium heat and cook chicken and onion for 5 minutes or until browned. Add KEEN’S Curry Powder and cook stirring for 1 minute, add mango and coconut cream and stir through.
  2. Reduce heat and simmer for 10 minutes. Serve with rice.
Recipe Tip

Increase vegetable intake by adding cooked green beans in final stages of cooking.
