Curry Prawn Cocktail Salad
1 small iceberg lettuce, cut into wedges
12 large cooked prawns, peeled, tails intact
1 avocado, peeled & sliced
½ bunch chives, cut into 3cm pieces
KEEN'S Curry Mayonnaise Dressing
¼ cup whole-egg mayonnaise
¼ cup crème fraiche (or sour cream)
KEEN'S Traditional Curry Powder
1 tbsp tomato sauce
2 tsp Worcestershire sauce
3-6 drops hot sauce, or to your liking
To make the KEEN'S Curry Mayonnaise Dressing,
place all the ingredients in a bowl, season with salt and pepper and whisk until smooth.
Arrange the lettuce, prawns and avocado on a serving platter. Drizzle over the KEENS curry dressing and sprinkle over the chives.
