Curry Prawn Cocktail Salad

Ingredients
  • 1 small iceberg lettuce, cut into wedges
  • 12 large cooked prawns, peeled, tails intact
  • 1 avocado, peeled & sliced
  • ½ bunch chives, cut into 3cm pieces
  • KEEN'S Curry Mayonnaise Dressing
  • ¼ cup whole-egg mayonnaise
  • ¼ cup crème fraiche (or sour cream)
  • 1 tsp KEEN'S Traditional Curry Powder
  • 1 tbsp tomato sauce
  • 2 tsp Worcestershire sauce
  • 3-6 drops hot sauce, or to your liking
Directions
  1. To make the KEEN'S Curry Mayonnaise Dressing, place all the ingredients in a bowl, season with salt and pepper and whisk until smooth.
  2. Arrange the lettuce, prawns and avocado on a serving platter. Drizzle over the KEENS curry dressing and sprinkle over the chives.
