Ingredients
  • Mustard Mayonnaise
  • 2 tbsp KEEN'S Mustard Powder
  • 1 tbsp water
  • 1/4 cup mayonnaise
  • Dough
  • 500 g plain flour
  • 3 tsp baking powder
  • 2 tsp salt
  • 1 tbsp KEEN'S Mustard Powder
  • 1 1/4 cup water
  • 1/4 cup olive oil
  • To Serve
  • 12 slices of smoked ham / prosciutto
  • 6 fried eggs
  • 3 cups rocket
Directions
  1. In a bowl mix together the Mustard Mayonnaise ingredients.
  2. In a separate bowl mix together all the dry ingredients for the dough. Make a well then add the oil and water and knead for 10 minutes until soft.
  3. Cover and rest for one hour at room temperature.
  4. Divide the dough into six balls and roll each ball out into circles 5mm thick, dock with a fork to ensure the dough does not puff while cooking.
  5. Heat a non-stick fry pan and fry each piece on each side for 3-4 minutes until golden.
  6. Spread each Piadina with mustard mayonnaise, top with smoked ham / prosciutto, rocket and a fried egg.
