Breakfast Piadina, with prosciutto, mustard and fried egg

Ingredients
  • Mustard mayonnaise:
  • 2 tbsp KEEN’S Mustard
  • 1 tbsp water
  • 1/4 cup mayonnaise
  • Dough:
  • 500 g plain flour
  • 3 tsp baking powder
  • 2 tsp salt
  • 1 tbsp KEEN’S Mustard
  • 1 1/4 cup water
  • 1/4 cup olive oil
  • 12 slices of smoked ham/prosciutto
  • 6 fried eggs
  • 3 cups rocket
Directions
  1. In a bowl mix together the KEEN’S Mustard mayonnaise ingredients.
  2. In a separate bowl mix together all the dry ingredients for the dough.
  3. Make a well and add the oil, water and knead for 10 minutes until soft.
  4. Cover and rest for one hour at room temperature.
  5. Divide the dough into six balls and roll each ball out into circles 5mm thick, dock with a fork to ensure the dough does not puff while cooking.
  6. Heat a non-stick fry pan and fry each piece on each side for 3-4 minutes until golden.
  7. Spread each Piadina with mustard mayonnaise, top with ham/prosciutto, rocket and a fried egg.
