Creamy Zesty Potato Salad
6 medium potatoes, peeled and diced
1/2 cup whole egg mayonnaise
KEEN'S Mustard Powder
1 tbsp lemon juice
cracked pepper and fresh parsley to serve
1 cup green beans, blanched and cooled
Place the potatoes in a saucepan of water and simmer for 15 minutes. Drain potatoes and let cool.
Mix together mayonnaise, KEEN’S mustard powder, lemon juice, cracked pepper and parsley then fold through the potatoes.
Serving suggestion: Serve with blanched beans with your favourite grilled meats and a fresh garden salad.
Use different styles of potatoes mixed together for color and flavour.
