Ingredients
- 6 medium potatoes, peeled and diced
- 1/2 cup whole egg mayonnaise
- 2 tsp KEEN'S Mustard Powder
- 1 tbsp lemon juice
- cracked pepper and fresh parsley to serve
- 1 cup green beans, blanched and cooled
Directions
- Place the potatoes in a saucepan of water and simmer for 15 minutes. Drain potatoes and let cool.
- Mix together mayonnaise, KEEN’S mustard powder, lemon juice, cracked pepper and parsley then fold through the potatoes.
- Serving suggestion: Serve with blanched beans with your favourite grilled meats and a fresh garden salad.

Use different styles of potatoes mixed together for color and flavour.
