Ingredients
  • Old Bay Butter
  • 4 tbsp unsalted butter, melted
  • 1 medium lemon, zest only
  • 2 tsp Old Bay Seasoning
  • Potato Swirls
  • 4 small Russet potatoes, cleaned
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped
  • 2 tsp Old Bay Seasoning
  • Equipment
  • 4 metal skewers (soaked in water for 5 min if using wooden skewers)
Directions
  1. Preheat oven to 200°C fan-force. Line a tray with baking paper. In a small bowl, combine all ingredients to make OLD BAY Butter. Mix well.
  2. Use a fork to poke some holes in the potatoes and add to a microwave-safe bowl. Cover with a ventilated lid and cook for 90 seconds, or until tender. Let cool slightly before skewering. Insert skewer into the bottom of each potato and gently push it all the way through to the top.
  3. To make the spiral cut, use a sharp, thin knife. Cut the potato at an angle starting at one end and continue all the way to the other end. Cut all the way down to the skewer whilst turning the skewer in the opposite direction of cutting. Gently fan out each potato down the length of the skewer until you have even gaps between the slices.
  4. Brush each skewer with olive oil, followed by melted OLD BAY Butter, leaving some for basting post cook. Place potato skewers on prepared tray and cook in oven for 25-30 minutes, or until browned and cooked through.
  5. Once cooked, brush potatoes with remaining melted OLD BAY Butter. Top with chopped parsley and crumbly feta. Sprinkle with more OLD BAY Seasoning.

OLD BAY Butter can be used on vegetables, or to baste seafood, steak or chicken.
