Preheat oven on 220°C (200°C fan-forced). Place each pita bread on a pizza pan, or a wire rack lined with baking paper and inserted into a baking tray (a ventilated base is best so that the bread becomes crispy).
Cover each pita bread with the Keen's meal base, dividing evenly. Leave at least 1-2cm from the edges for the crust. Top with chicken, followed by onion, and then cheese. Place in preheated oven and cook for 10-12 minutes or until golden and crispy.
Whilst cooking, place mango chutney, yoghurt and water in a small bowl. Mix to combine well. Once cooked, dollop mango chutney yoghurt and tomato chutney on top of pizza and sprinkle with fresh coriander.
