Ingredients
  • 4 x chicken thigh fillets, diced
  • 1 x medium onion, cut into thick wedges
  • 1 x green capsicum, cut into thick match sticks
  • 1 x carrot, cut into thick matchsticks
  • 1 x 285 g sachet KEEN'S Creamy Mild Chicken Curry Meal Base
  • ⅓ cup (80 g) crunchy peanut butter
  • ⅓ cup (80 mL) water 
  • ½ lemon, juiced
  • 1 tbsp (20 mL) soy sauce
  • 1 tsp (4 g) brown sugar
  • cooked rice
  • fresh coriander, leaves picked
Directions
  1. Spray a large non-stick frying pan with oil and heat over MEDIUM-HIGH. Add chicken and brown well for 4-6 minutes, add onion, carrot and capsicum and sauté for 2-3 minutes stirring often.
  2. Reduce heat to a simmer add Keen's meal base, peanut butter, water, lemon juice, soy sauce and sugar. Stir to combine then cook, stirring occasionally, for 5 minutes or until chicken is cooked and sauce is heated through.
  3. Serve over cooked rice with fresh coriander leaves.
